Core Responsibilities
Primary Functions
- Operate and monitor dairy production equipment including pasteurizers, homogenizers, separators, evaporators, and filling/packaging lines to ensure continuous and safe production of milk, yogurt, cheese, cream, or other dairy products.
- Prepare and execute production batches by following Standard Operating Procedures (SOPs), batching formulas, weighing and measuring ingredients, and documenting volumes and lot numbers for traceability.
- Conduct daily pre-start and post-shift equipment inspections, verify safety interlocks, gauges, valves, and instrumentation; report and log any discrepancies or abnormal conditions in the plant maintenance system.
- Run, verify, and document Clean-in-Place (CIP) cycles — including chemical dosing, temperature control, flow validation, and final rinse — to meet sanitation and regulatory standards.
- Monitor critical control points (CCPs) and production parameters (temperature, pH, flow rate, pressure, viscosity) during processing and adjust controls to maintain product specifications and ensure HACCP compliance.
- Perform in-line and at-line quality checks such as temperature logs, metal detector checks, weight verification, viscosity and fat measurements, and communicate deviations to QA/Shift Lead immediately.
- Maintain accurate production records, batch sheets, and electronic logbooks for each run, ensuring traceability of raw materials, processing data, and finished goods for audits and regulatory inspections.
- Load, unload, and stage raw materials (milk, cultures, additives) and packaging materials safely and efficiently; coordinate with receiving and warehouse for inventory control.
- Operate packaging equipment (cups, bottles, pouches, cartons) and inspection systems (metal detectors, check weighers, vision systems) to meet quality and throughput targets.
- Follow Good Manufacturing Practices (GMPs), personal hygiene protocols, allergen control procedures, and plant-specific food safety policies to prevent cross-contamination and ensure consumer safety.
- Execute sanitation and cleaning tasks in hygienic zones, including wet cleaning, manual scrubbing, and sanitizer application where CIP is not possible; maintain sanitation checklists and verification records.
- Participate in routine environmental and product sampling programs as directed by QA, and assist with corrective actions for out-of-specification (OOS) results.
- Troubleshoot minor mechanical, electrical, or process issues on production equipment, perform basic mechanical adjustments, and escalate complex repairs to maintenance technicians with clear fault documentation.
- Assist with start-up, changeovers, and shutdowns of production lines; perform product change-over protocols including flushing, line clearance, and changeover verification to minimize downtime and product loss.
- Maintain forklift and material handling equipment awareness and operate powered industrial trucks (if certified) for moving pallets and bulk containers in the production area.
- Adhere to safety programs, wear required PPE, and participate in safety meetings, lockout/tagout (LOTO) procedures, and confined space or fall protection protocols as required.
- Support yield optimization by monitoring scrap, rework, and waste, recommending process adjustments to minimize losses and improve efficiency.
- Train and mentor new operators on SOPs, GMPs, safe equipment operation, and accurate recordkeeping; provide hands-on coaching to ensure cross-functional competency across shifts.
- Participate in continuous improvement and Lean manufacturing initiatives (5S, Kaizen, root cause analysis) to enhance uptime, throughput, and product consistency.
- Ensure compliance with federal, state, and local dairy regulations, as well as internal quality management systems, and prepare documentation for internal and third-party audits.
- Maintain a clean, organized, and sanitary work environment; manage housekeeping tasks to meet plant standards and audit readiness.
- Perform final product inspection and release activities under QA guidance, including verifying labeling, lot coding, and packaging integrity before finished goods are moved to storage or shipment.
- Support seasonal production fluctuations and emergency response procedures (recalls, line stops) by executing containment, quarantine, and documentation steps as directed by QA/Operations.
Secondary Functions
- Assist QA and R&D teams with pilot trials, recipe validations, and scale-up activities to transition new products from development to full-scale production.
- Provide accurate data for production reporting, OEE tracking, and KPI dashboards; contribute insights on downtime causes and throughput variation.
- Support cross-training programs and help develop competency matrices for multi-skilled operator teams across packaging, processing and sanitation.
- Participate in safety committees and daily huddles to drive continuous improvements in workplace safety, ergonomics, and incident reduction.
- Contribute to supplier and incoming material investigations by verifying lot information and providing processing history for root cause analysis.
- Help coordinate preventive maintenance schedules by providing runtime feedback and reporting recurring faults to the maintenance planner.
- Engage with supply chain and warehouse teams to prioritize production schedules, expedite critical materials, and resolve inventory discrepancies.
- Lead ad-hoc process improvement projects (waste reduction, energy savings, yield recovery) and present findings to plant leadership with measurable impact.
Required Skills & Competencies
Hard Skills (Technical)
- Pasteurizer operation and validation (HTST/LTLT) — ability to set and monitor temperatures, flow, and pressure to meet microbial kill step and regulatory requirements.
- Homogenizer operation and adjustment for target fat particle size and product texture control.
- Clean-in-Place (CIP) system operation, verification, and troubleshooting including chemical handling and safety.
