Core Responsibilities

Primary Functions

  • Decorate a high volume of cakes, cupcakes, cookies, and other pastries to a consistent and high standard of quality, following both established brand designs and unique customer specifications.
  • Expertly ice cakes using various techniques, including achieving smooth, sharp edges with buttercream and flawlessly covering cakes with fondant.
  • Master a wide range of advanced piping skills to create intricate borders, delicate scrollwork, precise lettering, and detailed character or floral designs.
  • Consult directly with clients to understand their vision for custom orders, effectively translating their ideas into sketches and tangible designs while providing expert recommendations.
  • Skillfully sculpt and model three-dimensional figures, realistic flowers, and other complex decorative elements using fondant, gum paste, and modeling chocolate.
  • Apply airbrushing techniques to create smooth gradients, intricate patterns, and vibrant color effects on cakes and other confections.
  • Prepare a variety of icings, glazes, and fillings from scratch, ensuring correct consistency, flavor profile, and precise color matching according to design requirements.
  • Assemble, stack, and apply internal structural supports (dowels, plates) for multi-tiered cakes to ensure absolute stability for transport and display.
  • Ensure all finished products are visually perfect, meet strict quality and brand standards, and accurately reflect the customer's order before being presented for final approval.
  • Develop and test new, innovative cake designs and decorating techniques to contribute to a fresh and competitive product line.
  • Adhere to strict production schedules and deadlines, efficiently managing time to complete multiple, often complex, orders simultaneously without compromising quality.
  • Accurately price custom cakes and decorated goods based on the cost of labor, ingredients, design complexity, and materials used.
  • Handle and apply delicate decorations, such as handcrafted sugar flowers, isomalt sculptures, and intricate lace work, with extreme care and precision.
  • Operate and maintain specialized decorating equipment, including airbrush compressors, edible image printers, and electronic die-cutters.
  • Maintain a meticulous and organized decorating station, including the regular cleaning and sanitizing of all tools, surfaces, and equipment in accordance with food safety standards.

Secondary Functions

  • Assist with baking, mixing, and other pastry production tasks during periods of high demand or as needed to support the kitchen team.
  • Provide exceptional customer service by answering inquiries, offering creative suggestions, and professionally resolving any issues with custom orders.
  • Carefully package and prepare decorated items for customer pickup or delivery, ensuring they are secure and protected from potential damage.
  • Train and mentor junior decorators or bakery apprentices, providing constructive feedback and guidance on techniques, standards, and best practices.
  • Photograph finished creations for use in the company's professional portfolio, social media channels, and marketing materials to attract new business.
  • Manage and maintain a detailed inventory of all decorating supplies, including colors, fondants, piping bags, and specialty tools, placing orders to prevent shortages.

Hard Skills (Technical)

  • Advanced Piping Techniques: Proficiency in creating a wide variety of borders, lettering, flowers, and intricate patterns with various icing consistencies.
  • Fondant & Gum Paste Expertise: Ability to smoothly cover cakes in fondant, as well as sculpt, model, and create detailed 3D figures and decorations.
  • Buttercream Mastery: Skills in creating both textured and perfectly smooth finishes, along with piping and decorating with buttercream.
  • Structural Cake Construction: Knowledge of doweling, stacking, and internal support systems for large and multi-tiered cakes.
  • Airbrushing and Painting: Experience using an airbrush for gradients and stenciling, as well as hand-painting details with edible colors.
  • Color Theory & Mixing: A strong eye for color and the ability to precisely mix custom shades of icing and fondant to match client requests.
  • Food Safety & Sanitation: In-depth knowledge of safe food handling procedures; ServSafe or equivalent certification is a significant plus.

Education & Experience

Educational Background

Minimum Education:

High School Diploma or equivalent.

Experience Requirements

Typical Experience Range:

Experience with a wide range of styles, from modern and minimalist to classic and ornate wedding cakes. Portfolio should showcase technical skills in piping, fondant work, and sculptural elements.
