Core Responsibilities
Primary Functions
- Operate high-volume commercial dishwashing machines efficiently, carefully loading and unloading racks of glassware, dishes, and cutlery to maximize cleanliness and prevent breakage.
- Methodically scrape, rinse, and pre-soak all soiled dishes, pots, pans, and kitchen utensils to remove food debris before the main washing cycle.
- Expertly hand-wash large or delicate items not suitable for the dish machine, utilizing the three-compartment sink system (wash, rinse, sanitize) in accordance with health codes.
- Continuously monitor and maintain correct water temperatures and chemical concentrations (detergent, sanitizer) in the dish machine and sinks to ensure effective sanitation.
- Carefully transport and store all clean dishware, cookware, and utensils in their designated storage areas, ensuring they are organized and readily accessible for kitchen and service staff.
- Maintain impeccable cleanliness and organization within the dishwashing area, including regularly cleaning walls, sanitizing sinks, and clearing floor drains.
- Systematically collect and empty trash and recycling bins from all kitchen areas, transporting waste to the main disposal site to maintain a hygienic workspace.
- Perform scheduled breakdown, thorough cleaning, and de-liming of the commercial dish machine at the end of a shift or as directed to ensure its longevity and performance.
- Routinely sweep and mop all kitchen floors, including walk-in refrigerators and dry storage areas, to prevent slips and maintain a safe, sanitary environment.
- Assist in the comprehensive cleaning and sanitization of food preparation surfaces, workstations, and cooking equipment as directed by the Chef or Kitchen Manager.
- Diligently follow all established food safety, sanitation (HACCP), and workplace safety protocols without exception to protect guests and team members.
- Polish silverware and glassware as needed to ensure they meet the restaurant's presentation standards before being returned to service.
- Sort and remove trash, placing it in designated pickup areas, and clean the garbage cans daily to prevent pests and odors.
Secondary Functions
- Provide support to the culinary team with basic food preparation tasks, such as washing and peeling vegetables, portioning ingredients, or preparing simple garnishes under supervision.
- Assist in receiving, verifying, and properly storing food and supply deliveries, applying the "First-In, First-Out" (FIFO) method to ensure product freshness.
- Help with the daily setup and breakdown of kitchen stations before service begins and after service concludes, ensuring all areas are ready for operation.
- Proactively restock service and cooking lines with clean plates, bowls, silverware, and other essential items during peak service hours to prevent delays.
- Execute assigned deep cleaning projects according to a schedule, which may include cleaning kitchen hoods, ovens, fryers, and walk-in coolers.
- Maintain the order and cleanliness of all storage areas, including dry goods storerooms, refrigerators, and freezers, by organizing shelves and consolidating products.
- Communicate clearly and respectfully with chefs, cooks, and front-of-house staff regarding the status of clean dishes, equipment malfunctions, or low supply levels.
- Alert management or maintenance personnel to any equipment malfunctions or safety hazards observed in the kitchen or dishwashing area.
