Primary Functions

- Maintain meticulous and accurate service logs for each item, documenting the condition upon arrival, all services performed, and final quality checks.
- Develop a practical understanding of metallurgy, learning how different steel types (e.g., high-carbon, stainless, VG-10, powdered steels) respond to heat and abrasion during the sharpening process.
- Uphold stringent quality control standards by rigorously testing the sharpness and finish of every blade before it is approved for return to the client.
- Strictly adhere to all workshop safety protocols and procedures, consistently using required personal protective equipment (PPE) such as safety glasses, gloves, and respirators.
- Disassemble and reassemble various types of knives, including folding and fixed-blade models, for deep cleaning, part replacement, and handle repair.

- Develop proficiency in traditional hand-sharpening methods using Japanese water stones and oil stones for high-end cutlery and delicate blades.
