Core Responsibilities

Primary Functions

  • Receive, inspect, and verify meat and seafood deliveries against invoices, ensuring product quality, temperature, and count are accurate upon arrival.
  • Efficiently and safely transfer products from the delivery truck to designated backroom storage coolers and freezers, maintaining the cold chain at all times.
  • Meticulously organize and rotate all meat products in coolers, freezers, and display cases following the First-In, First-Out (FIFO) principle to ensure freshness and minimize spoilage.
  • Diligently stock the fresh, frozen, and smoked meat display cases, ensuring they are consistently full, well-organized, and visually appealing to customers throughout all business hours.
  • Prepare, weigh, package, and label various cuts of meat, poultry, and seafood according to store specifications and state/federal government regulations.
  • Safely operate and maintain essential meat department equipment, including automatic wrapping machines, digital scales, label printers, grinders, and slicers.
  • Proactively monitor product quality and freshness on the sales floor, promptly culling and recording any items that do not meet the store's high-quality standards.
  • Maintain accurate and consistent temperature logs for all coolers, freezers, and display cases to ensure compliance with food safety protocols and health department regulations.
  • Under the guidance of senior staff, execute proper trimming of primal meat sections to prepare them for retail sale or for the butcher.
  • Proactively engage with customers to provide friendly and knowledgeable assistance, answering questions about different cuts of meat, cooking recommendations, and product origins.
  • Assist in building and maintaining attractive and impactful promotional displays for weekly sales, seasonal items, and special holiday events.
  • Perform routine, thorough cleaning and sanitization of the meat department, including display cases, work surfaces, equipment, floors, and storage areas, to meet and exceed health standards.
  • Manage on-hand inventory levels by conducting regular cycle counts and communicating stocking needs and product shorts to the Meat Department Manager.
  • Assist in grinding fresh beef, pork, and other meats, ensuring proper fat-to-lean ratios and adherence to all safety procedures.
  • Unload pallets and cases of meat products from trucks using pallet jacks or other material handling equipment.

Secondary Functions

  • Support the department by accurately placing price signs and promotional tags, ensuring pricing integrity for all items.
  • Collaborate with associates in adjacent departments (e.g., Produce, Deli, Seafood) to ensure a seamless and positive shopping experience for all customers.
  • Participate actively in team meetings and mandatory training sessions on crucial topics like food safety, customer service excellence, and new product rollouts.
  • Contribute to a positive and safe work environment by strictly adhering to all company policies, loss prevention procedures, and OSHA safety guidelines.
  • Assist in the proper documentation and disposal of expired or unsellable products according to company policy and waste management protocols.
  • Provide backup support during peak business hours or for other departments by helping with price checks, bagging, or general customer service duties as needed.
  • Stay informed about current market trends, new products, and seasonal items within the meat and poultry industry to better serve customers and contribute to merchandising ideas.

Required Skills & Competencies

Hard Skills (Technical)

  • Food Safety Knowledge: Understanding of HACCP, proper food handling procedures, temperature danger zones, and sanitation standards. A Food Handler's Certification is a significant plus.
  • Inventory Management: Proficiency in the FIFO (First-In, First-Out) rotation method to ensure product freshness and reduce waste.
  • Meat Product Knowledge: Familiarity with various cuts of beef, pork, poultry, and lamb.
  • Equipment Operation: Ability to safely operate meat wrappers, scales, label printers, grinders, and slicers.
  • Basic Knife Skills: Competency in basic trimming and cutting techniques for preparing retail-ready products.
  • Receiving & Unloading: Experience with verifying shipments against invoices and using material handling equipment like pallet jacks.

Experience Requirements
